Perfect "diner" Pancakes

Is it just the idea of someone else cooking up those stacks of pancakes that makes them so delicious...or is there a secret ingredient they are hoarding from the masses that make us come back for a short stack or two?

Try this recipe and you may think we have stumbled upon a culinary secret...the "perfect" diner pancake especially if you serve them with the scrumptious Buttermilk or Apple Syrup .

"Perfect" Diner Pancakes

this recipe was modified from the King Arthur Flour original

2 large eggs

1 1/4 cups milk

1 teaspoon Vanilla

2 tablespoons melted butter

1 1/2 cups flour

3/4 teaspoon salt

1 teaspoon Baking Powder

1/4 teaspoon Baking Soda

1/4 teaspoon Nutmeg

1/4 cup Malted Milk powder

1- Beat eggs and milk until light and foamy. Stir in the butter or vegetable oil.

2 - Whisk the dry ingredients together to evenly distribute the salt,

baking powder, baking soda, malted powder and nutmeg.

3 - Gently and quickly mix the dry ingredients into the egg and milk mixture.

Let the batter rest for at least 15 minutes, it"ll thicken slightly.

4 - Heat a heavy frying pan over medium heat, or set an electric griddle to 375°F.

Lightly grease frying pan or griddle.

*The pan or griddle is ready if a drop of water will skitter across the surface, evaporating immediately

5 - Drop 1/4 cupfuls of batter onto the lightly greased griddle.

Bake on one side until bubbles begin to form and break,

about 2 minutes; then turn the pancakes and cook the other side until brown,

about 1 1/2 to 2 minutes. Turn over only once. Serve immediately.

*Use 1 cup milk if you're baking under hot, humid conditions, or if the batter rests longer than 15 minutes.

Use up to 1 1/4 cups milk in cold, dry conditions.

For a whole grain breakfast treat, replace 1/2 cup of the all-purpose flour with 1/2 cup of ground oats.

Apple time...caramel, cider, juice and syrup! Yum

Apples come in bright, brilliant colors with a snap, happy, crispy bite. I just love apple time. But when those winter snows blow and the apples have gone into storage...here is a recipe you can make when apples are not as fresh but you want that tart sweet fresh apple flavor.

Apple Cider Syrup
1 cup sugar
2 Tbs. Cornstarch
1/4 tsp. Salt
1/8 tsp. Cinnamon
Dash Nutmeg
2 cups Apple Cider/Juice
2 Tbs. Lemon Juice.

In a saucepan, mix together dry ingredients until well combined. Add Apple Cider and Lemon Juice. Combine and bring to a boil. Boil 1-2 minutes. Cool before serving.

This is a delicious change from your basic pancake syrup. Pancakes, waffles, puff pancakes, and french toast are all better with Apple Cider Syrup.

I have been cooking and sewing since I was a child. I’ve never lost my curiosity for the cultural, traditions and science of food. Recipes and my love of food has been my passport into various cultures around the world. I graduated from Brigham Young University with a degree in Home Economics Education; with as much chemistry as a premed student I found more to learn about the “how and why” of Food Science.

I continue take classes to learn about the ever-changing science of food and nutrition.

Bold, Better, Bread

There is a real "back to Bread" movement happening from coast to coast. You'd think there was a cookbook toaster just for bread with all the bread books are popping up like hot buttered toast waiting to be gobbled up.

I've turned my not so "gourmet" kitchen into a veritable "test kitchen" for a few of the "artisan" bread books popping out of various publisher houses. I've found some I really like and some I could do without. There are simple, basic variations as well as some that might need a PHD in Food Science to decipher.

Artisan Bread in Five Minutes a day was the rule-breaking best seller that has helped lead us back into the kitchen and the art of making bread. I have tried this method and added a few changes to make a bread that is healthy and reminds me of the bread I found in Germany and a few local European bakeries.

Another book that is a good blend of food science a basic bread skill is from Peter Reinhart. His "Artisan Breads Every Day" is fabulous. It is basic enough to teach about the ingredients that make a truly artisan bread as then help you with step-by step pictorial instructions to be successful with a wonderful variety of breads.

If you want to take a step further into the "fermented" world of bread get your hands on the Bread Bakers Apprentice also from Peter Reinhart and jump right into pre-ferments, sourdough and soakers.

Moving on...past the "challenge" and back to Bread

I am not going to say I am a quitter I am just going to say I am moving on without further blog challenges.
Blogging challenges are wonderful and a very good thing but if I try to catch up I will not keep up with my recent diversions.

So, I am going to share some of my recent exploits in the world of Bread.
It's not rocket science or nuclear physics or even brain surgery...just bread.

Tell me truly are there many scents out there as comforting as baked bread or the crunch through to the soft center of a loaf of bread?
I would have to say no!

I've been making bread for more than 40 years. You see during a quick trip to Idaho, my great aunt discovered that I had not been taught how to make bread by the ripe old age of 11. I was immediately escorted into her Idaho farm kitchen to start my bread making education. For the rest of that summer it was my job to make the bread each week with under the supervision of my mother for out family of 9.

Ever since then I have loved making breads of all kinds. It's all about fermentation you know; grains, grinds flours. see what they can do when you mix them up with water and yeast. I love to try new recipes, tweek them a bit and make the my own.

Challenge #16 - a song that makes me cry...or almost

While serving in our Stake YW and making plans for the Seminary Graduation of 2000 I suggested this musical selection to our Youth Council. The truth about our young men and women written in these songs will always touch my heart. As time progressed these youth were concerned that they were not going to have enough participation to their satisfaction.

That night I was blown away as 16 youth performed this medley.

Little did I know I was listening and watching my son perform with his future wife.

Challenge #15 - A role model

My first reaction is to say the Lord, Jesus Christ as my ultimate role model.
but...there are so many ordinary people, both young and old, that I've looked up as examples it would be difficult to name just one.

1- My hubby, good, grounded, hard working, get it done.
2- My mom - hard working, optimistic, the eternal Cougar fan.
3- My dad - a believer and mentor.
4- My kids & my loving kid in-laws - giving, determined and oh so loving.
5- My grandchildren - living life with enthusiasm!
5- My brothers & sisters (including in-laws) - support, encouragement, and a good laugh!
6- Neighbors and friends - serving and sharing
7- Teachers who taught and cultivated my curiosity

I am forever grateful for others who have lit the way, make it bright and carry me on.

Challenge #14 - a non-fictional book

Yikes! The most recent non-fiction books I've been reading have to do with "classroom management" which should be listed under Lion taming and other dangerous occupations...

I am not so much into self-help books as much as I once was; what this says about me I do not care too much. There is one "self-help" book that has impacted me in the past few years called "A Heart Like His" by Virginia H. Pearce

I would have to say I do like gardening books, decorating books, big beautiful art books and interesting cookbooks.

Challenge #13 - a fictional book

What just one! ...a fictional book that I like. I don't think I could list just one so I won't.

I love a good mystery...The Da Vinci Code by Dan Brown
I can get into a historical novel...The Book Thief by Markus Zusack
I really like a bit of fantasy...Peter Pan by J.M. Barrie or The Goose Girl by Shannon Hale
I think clever word usage is fun...The Eyre Affair by Jasper Fforde

Sometimes a good book of fiction is at least a diversion if not a bit of a "vacation."

Challenge #12 - something I am OCD about.

You know I think there are more things I do or like to have done in a certain manner.
Oooh that must mean I am getting older than I want to admit.

There is one thing that I really have a problem with...labels.
Price Stickers and product labels make me a bit nuts.
I do not like the price sticker left on anything I am going to use.
Unnecessary Package labels are in the same category.
I take them off plastic storage bins, canisters and random containers.
If I don't like the label or sticker on a product and don't need it for
identification of the item it will be coming off.
I will not be a billboard for unattractive labels.
I will do whatever I need to remove that label, sticker and it's residue.

Over hill, over dale, we go hiking along...

Short hikes, long walks, up and over the next hill to see what we can see is always a learning experience.
Rick has always loved taking a "hike".
We always get a little botanical lesson and quiz along the way. We are also schooled in the care of wilderness environment "leave no trace", in other words if you pack it in you pack it out and you never cut through the "switch backs"

Through many of the years I was content to stay home with those in our family who were too "young", too "little" or just not quite up to the trip. As the kids grew older they have had great experiences backpacking with Rick, with plenty of opportunities to use their scouting skills.

One summer, nearly 10 years ago our family made took a backpack trip into the Uinta mountains. As we hiked along trails and through meadows I was usually the "caboose" unless Max came back to give the "caboose" encouragement as he took most of my stuff in his pack and said "Mom, you're doing great"!

when I noticed some VIP's at the Houston Zoo.

There weren't many people in the area so I snapped this shot.

As Barbara and Barbara were leaving with their Secret Service guys

they turned to look towards us. You see, we had the cute baby, two very cute boys

and one of those cute boys was sporting squeaky shoes.

The lovely Bush ladies smiled and waved.

Challenge #8 ...a photo that makes me a little bit sad

My dad is getting older and isn't able to do as much as he could when he was younger.
This will happen to everyone who lives long enough, this I know.
It is just a bit sad to know my children do not know the man he was.
It is just a bit sad to not have him present at family occasions.

I wish my children, my nieces and nephews knew him when he was a bit younger.

I remember walking to the stadium with dad to see a BYU football game.

I remember a dad taking time to show me a bit about painting when I felt all alone.

I remember a dad telling me to look at the shape of things and then draw.
I remember a dad who built houses even of gingerbread.
I remember a dad who took time to listen.
I remember a dad who could figure anything out; a builder, a thinker and a bit of a tinker.

He is slowing down like I will one day and I love him very much.

Challenge #4 My Favorite Book

When I was twelve my older sister gave me list of summer reading. That list included Jane Eyre, David Copperfield, Anna Karenina, Pride & Prejudice and a Tale of Two Cities. I started with David Coppperfield moved on to Jane Eyre and on through the list. I learned that I loved historical fiction.
Jane Eyre is still a favorite but now I just can't seem to pass up a good mystery or fantasy adventure. Try reading the original Peter Pan or the more recent Eyre Affair if you like words.

Challenge #3 - a favorite teacher

I have many teachers who I would count as favorites:

Mrs. Nybo - 6th grade, she encouraged me to look at different cultures of the world
Mr. Paulson - 8th grade Geography, helped to fuel my interest in the world
Miss Mellor - 8th Grade English, teaching me to dissect words and find their roots...that is fascinating.
Mr. Lloyd - deepened my appreciation of the United States.
Mrs. Warner - Encouraged me to explore world cultures through recipes
Mrs. Liechty - helped me believe and achieve the elusive and rarely given "A" in the Clothing & Textile Dept. of BYU

Blog Challenge #2 - My definition of success...

... being able to accomplish a goal, work or process.

Ultimately, success would be to see those who have lived before me, those who are here around me and those who have yet to come understanding, living and loving one another withing the bounds of the gospel of Jesus Christ. To accomplish this kind of success would depend upon my ability to love and care as Christ would have me do. This accomplishment would depend upon the beauty and strength of the atonement of Christ.

In the meantime success means each day that I get up, search the scriptures, encourage those around me, do my best with each task I am given, at the end of the day thank those who have helped me through.

Challenge #1 - My Biggest Accomplishment

I don't know if I can claim anything I have done in my life as MY greatest accomplishment...but, in a disposable world where instant gratification is expected I would have to say the accomplishment that is most meaningful to me would be my marriage.
30 plus years of life with Rick isn't an accomplishment I can claim solely as my own; it is something I cherish.

I have great children and wonderful grandchildren that make my life amazing. I would have to say that without a loving Heavenly Father who has blessed me with others who help me accomplish great things in life; my life would be much less than it is.

Caring with Bears

A typical 9th grader or...Freshman is usually more concerned about their phone, hair, boyfriend or girlfriend, ipod, music, etc. Occasionally, these young people emerge from their typical concerns and look outside to see there are people who really need what they can give. Recently I have witnessed this metamorphosis.

I have 21 students in my 9th grade Clothing class. Usually, in this class, students want to make PJ pants, shorts, bags, and other projects for themselves.

My students challenged
themselves to make something for someone they do not know and will not see. They are taking a week to make their version of "Care Bears".

These bears are small, cuddly and will be traveling to Guatemala as a gift to give comfort to young children undergoing various surgical procedures. These 9th graders have cut, stitched & stuffed these little bears with care and concern.

Alexander Graham Bell said "When one door closes, another opens; but we often look so long and so regretfully upon the closed door that we do not see the one which has opened for us."
This week I have been given an unexpected opportunity. I will be teaching part-time at North Davis Jr. High; I will be a Norseman. I will be teaching 8th & 9th graders. My classes will include FACS exploration (code for Home Ec. for 8th grade) and 9th clothing.
I wasn't looking for this job, thought my college major was near extinction, was looking in many other directions for opportunities.

I know this will be a challenge but I keep remembering how Julia Child talked about being "fearless" as she entered Le Cordon Bleu in Paris. So, I too, will be fearless and hope to help some young 8th or 9th grader gain an appreciation for Family & Consumer Sciences. I will also challenge them with this nugget...

Kid's Just Want to Play!

Every child has a desire to play, to smile, get a thrill to being with other children.

Not all play grounds make this possible. Wheelchairs, walkers, and other devices can hinder a child from being able to play in an ordinary playground.

Chloe's Sunshine Playground is an accessible park that is tentatively planned to be built in Syracuse, UT. The playground will include features that will allow ALL children to play side-by-side, including those with special needs.

Two Dove & Four Robin

Two baby Dove and four baby Robin eggs. Can you believe the color of the Robin eggs. I am amazed!
The eggs cracked and birds hatched. The mothers are protective so we had to be very "covert" to get these shots.
The Dove are much more attractive at this point and have just about outgrown their "condo" on the door. The Robins on the window ledge are well guarded, pictures are hard to get. These Robin babies are pretty ugly right now...as you can see.

I usually have a seasonal wreath on my front door...

using florals, vines, twigs, ribbons and twine.
I've even used a man-made bird nest or two.
It seems that some of my feathered friends
wanted to add a more "natural" dimension
to my creations.

Last year a couple of finches decided the wreath
was a great place to nest.

The Finches were wonderful tenants.

They built a small nest, laid very small eggs

This year I hung the wreath and the very next day

I noticed a bit of grass on the porch and the next day more bits of grass.

finally we noticed a much larger nest.

Robins have moved into the wreath.

there is more CHIRP CHIRP than knock knock at this door.
Will there be eggs?
Will there be baby birds?
Wait and see with me!

Fulfillment...

I am presently working in a "fulfillment center". You may wonder if this could be the place where all wishes, wants and desires are all fulfilled but you would be disappointed. We provide support to home consultants who use in-home "parties" to sell their products. While I've been working here I've noticed a few things about people, places and packaging.

You could live in a glen, village, township, city, burough or territory.
You might live on a lane, street, avenue, court, circle, route or drive.
But then again you may be on an FM or a CR...and what pray you are they.
FM is an abbreviation for Farm to Market road.
CR, similarly means County Road.
There seems to be a multitude of "whisperings" Whispering Oaks, Whispering Glen, Whispering Forest, Whispering Mill...why all the whisper and what the whispering is all about I wonder.
You could also go the route of royalty...on Knights Cove, Queens Creek or Coronation Drive.

Sweet home is not only in Alabama but also found in Oregon.
The North Pole is in Alaska...forget all that global positioning.
The Yukon can be found in Oklahoma...maybe this is where all the global warming theories got a bit convoluted...it is just an address guys.

There are addresses so rural that UPS does not make a home delivery and that person must drive 90 minutes from a Texas ranch to pick things up from the UPS depot. I guess only Fedex must be able to find those in the truly rural "sticks". (It must be true I saw it happen in the movie Castaway.)

There are all kinds of names for places and people but presently some of my favorites are Bambi, Bimberly, Taffy, Kitten and Cinamon...yes Bimberly, Bambi, Kitten and Taffy are real people along with Sunshine and Cinamon.

In the meantime I will continue to help "fulfill" some wishes, wants and desires to consultants you may know or meet...even Bimberly, Bambi and Kitten.

Salt Lake City to Atlanta to Paris to Hamburg and Elder Max!

Families large and small graciously gave us glimpses into the lives of the German people. Derk & Anya Franze, Sister Reske, The Bolte, Mueller, Glaeser and Westvogel families made sure we felt welcome from Hamburg to Elmshorn to Dillingsdorf to Berlin and onto Bremen.

Following the "Fairy Tale Road" of the Brother's Grimm we wound our way through Goslar, Goettigen, Hanoverisch-Munden, Kassel and on to Bremen.

Our last couple of days were spent in Copenhagen. We found the original Christus along with the twelve apostles from the New Testament, the home of Hans Christian Andersen and the Little Mermaid...

The "Glitterlicious" cupholder

Drink like the woman you truly are. Why settle for the common plastic, styrofoam or coated paper cup to carry your beverage of choice when you can have glitter and glitz. Now the "How-To" for you...

You will need:

1 - 44oz. Sonic cup

-Modge Podge

-Glitter

-Feathers

-Ribbons

-Glitzy Do-Dads

1-Coat the outside of your cup with Modge Podge.
2-Pour glitter over it.
3-Allow the glitter to dry COMPLETELY
Repeat steps 1, 2 & 3
4-One last coat of Modge Podge to glue the gltter in place.
Embellish and decorate to your heart's desire.

Bob...the dog

Yes, it is true Bob is in BIG trouble. Bob is our big, brown Chocolate Lab; and now we know he just can't be trusted by himself in the big backyard. He has chewed up sticks and stuff that were left out for him but then he got bored and went for the BBQ cover. Tore it right of the BBQ, ripped it to pieces and flung it about the yard.
Well, we had a serious talk with him about what was appropriate to chew (rawhide bones, pig ears and other doggy treats) and those things that were not appropriate like BBQ covers. We replaced the cover thinking Bob understood approppriate and inappropriate "chew toys"
We had about 2 days without destruction in the backyard and then we noticed a big black thing laying on the snow...you guessed it...the brand new, $50 bbq cover was in the process of being shredded. Bob had also found a new "chew toy", my favorite hand shovel that I love to use in the garden.
After giving Bob another "talking to" and putting him in the kennel for a serious "timeout" we decided to toss the BBQ cover and hide the garden and bbq tools inside the grill. This was a good idea until last night...

I completely forgot about the "hiding" place and started up the grill. Well lo, and behold everything inside had started on fire. and we had dripping plastic and ruined grates and burners...so now me and Bob are in the dog house so to speak. I reminded Rick that Bob is a dog with very little brain...but he is still in trouble.

I will get him some new bones tomorrow.

noun : a person or thing that takes the place or function of another

...in my case a person who takes the place or function of another in schools throughout Davis County school district.
As of November I have joined the ranks of substitute teachers. I have been in High Schools, Jr. High Schools as well as Elementary Schools. I have worked in both Charter and the good old traditional Public school; Year-round as well as Traditional schedules.

There are pros and cons in every situation of life's expereinces. Substitute teaching is no exception. Among the positive aspects are the options take or leave a job, choosing which schools and grade levels can be very powerful. Cons are the unknown and the known... not knowing the school, the teacher, their expectations and equipment can be intimidating as well as requiring FLEXIBIITY and a reality check.

The reality check is this.
..Substitutes are basically there to manage a classroom...to babysit children of various ages. If the teacher has prepared a good plan for the day and the substitute realizes they are the one in charge the day can be good, even enjoyable. The other reality check is if it is a bad situtation you don't have to go back, ie. the option to chooose!
The Flexibility...to choose the battles that matter most.

As the saying goes "experience is the best teacher" I don't know if experience is the best teacher but my experiences are teaching me how to survive and in some cases even enjoy substitute teaching.

Life is full of opportunities and substitute teaching is presently one of mine.

CHRISTMAS stolen? or Stollen!

One favorite Christmas recipe at our house is Stollen...not by theft or deception just by culinary choice. German Stollen is a rich sweet bread usually made with fruits and nuts shaped into a flat oval and folded to represent a swaddled baby.

Christmas Stollen - yields 3 loaves

Basic Dough
1 C. Milk, scalded and cooled
5 C. unsifted Flour, more or less
3/4 C. Sugar
1 t. Salt
1/2 C. Butter, softened
1 1/2 T. Yeast
1/2 C. warm Water + 1/2 t. Sugar
1 Egg

Combine flour, sugar, salt. Cut in butter. Dissolve yeast in warm water with 1/2 t. sugar added. Allow yeast to stand 5 minutes. Add egg, milk and yeast to flour mixture. Beat until well mixed. Dough should be soft but not sticky. Knead for about 5 minutes or until smooth and elastic. (At this point the dough can be covered with plastic wrap and refrigerated overnight or proceed with the following recipe)

Christmas Stollen Ingredient List
1 C. Craisins
3/4 C. chopped Dried Apricots
3/4 C. Slivered Almonds
1/4 t. freshly grated Nutmeg
Zest of 1 Lemon
Basic Dough - one recipe
Melted Butter
Powdered Sugar

Mix craisins, apricots, almonds, lemon zest and nutmeg into the basic dough until incorporated.
Divide dough into thirds. Roll dough into 11 x 7 ovals. Fold in half lengthwise to form a crescent shape. Brush with butter and cover. Let raise until doubled in size about 30-45 minutes. Bake 350 degrees 25 min.. Cool and HEAVILY sprinkle each loaf with Powdered Sugar.

Do You Salsa?...not the dance, the condiment!

When tomatoes, onions, and chiles are ripe it is salsa making time.

We've tried many a salsa recipe and this is the one we like best.

WILD WEST SALSA

4 1/2 Qt. crushed, peeled Tomatoes

4 1/2 C. Anaheim Chiles, finely chopped

1/3 C. Jalepeno, finely chopped

2 C. Onion, finely chopped

6 cloves Garlic, minced

1 C. Bell Pepper, finely chopped

1 -1/2 t. Oregano

1 T + 1-1/2 t. Cumin

1-1/2 t. ground Black Pepper

3 T. Salt

1-1/2 t. MSG (optional but helps soften chile skins)

1 C. Ultra Set *

In an 8 qt stockpot mix together all ingredients except Ultra Set.
Add Ultra set by sprinkling 1/4 C. at a time over the salsa.

Using a whisk stir it into the salsa to avoid clumps.

Allow mixture to come to a simmer over medium heat.
Simmer for 10 minutes. Pour into clean pint jars leaving
1/2" headspace. Process for 30 minutes
Makes 10-11 Pints

*Ultra Set is a modified cornstarch that will thicken both

cold and hot foods without leaving a starchy aftertaste.

(It is available at various kitchen supply stores)

Diving

I just started diving this year. I have watched underwater scenes in movies and TV with curiosity for years. Curiosity about the aquatic life, the sensations of breathing underwater as well as my family propelled me to get certified. It was scary, exciting, and cool to learn scuba.
